COFFEE PROFILE
The Las Lajas farm is located in the Sabanilla de Alajuela in the Central Valley, on the slopes of the astonishing Poas Volcano. The farm belongs to the Chacon family who represent a fourth generation of coffee producers. The Chacon family has been producing coffee in the fertile volcanic soil of for over 80 years.
Oscar and Fransesca transitioned their farm to organic 10 years ago and are now a leader in environmentally sustainable coffee farming practices.
What's Honey Coffee?
Las Lajas farm used a unique method in the preparation of this lot of coffee. Instead of pulping and removing all of the mucilage, the fruity pulp surrounding the coffee bean, they only remove a portion of it. The beans are then sun dried and end up a golden color that has taken on the flavors from the fruit. Honey coffees are sweet and comples and their flavor profile cannot be matched.
