FRESH BEANS
The best cup of coffee is the freshest one.
At Dunn Bros Coffee we roast all our beans in-store and sell them within three days of roasting. It's a stringent freshness standard, to be sure, but it's the only way to ensure our beans and drinks are as fresh and delicious as possible. It's not the easiest way to do it, but it is the right way.
Coffee beans develop their aroma and flavor during the roasting process. As the beans are roasted, complex chemical reactions take place. Moisture is driven off. Carbohydrates are transformed to soluble sugars. Proteins are broken down and aromatic oils (called coffee oils, or caffeol) are created. These aromatic oils are water-soluble and carry the flavors that you taste in a cup of coffee. Unfortunately, as soon as the coffee beans are roasted, oxygen starts to break down the oils and the beans begin to lose their flavor. The fresher the beans are, the more flavorful the final cup is.
It's a time-consuming process that ensures each and every customer who walks into a Dunn Bros Coffee shop gets a fresh, delicious cup of coffee every time. And when it's your cup of coffee, why would you settle for anything less?

But it's not just fresh roasting that makes our beans better. Just as important as the roast are the beans we choose to roast in the first place. At Dunn Bros Coffee we go to great lengths to source the finest possible coffee beans from around the world: top-grade, defect-free Arabica beans. It's not a fast process, but, again, it's the only way to do it. Each single-origin bean reflects the unique nuances of the farm where it was grown. Altitude, weather patterns, soil—even local flowers—all go into defining the raw character of a green coffee bean. We sample countless offerings from each origin and select the very finest beans the farmers have to offer: True specialty coffee beans that are generally only available in small lots. But, because we roast all our beans in-store, those high-quality, small lots are the perfect way for us to source our beans. Once in our stores, our coffee Roasters use carefully designed profiles (roasting recipes) and roast each unique coffee to perfection. It's a time-consuming process that ensures each and every customer who walks into a Dunn Bros Coffee shop gets a fresh, delicious cup of coffee every time. And when it's your cup of coffee, why would you settle for anything less?
